Healthy Summer Recipe


Summer is in full swing and for many of us, that means we’re getting more physical outdoors. It’s a great time for activities like hiking, swimming - my family’s personal favorite - and running.

In order to maintain a healthy lifestyle this summer, you’ll want to make sure you’re getting the right amount of nutrients to keep yourself in tip top shape. I have a delicious recipe to share today that fits the bill, but before I do, I want to talk about my secret ingredient - Eggland’s Best eggs. They have more than double the vitamin B12 compared to ordinary eggs, which is important for turning food into energy during these active summer months!

By swapping out ordinary eggs for Eggland’s Best eggs, you’ll also get superior nutritional benefits, including:

  • 10 times more Vitamin E

  • 6 times more Vitamin D

  • Double the Omega-3s

  • 25% less saturated fat

One of my favorite summer treats is a fresh avocado. Just like EB eggs, they are tasty, nutritious, and versatile. This Baked Egg in an Avocado recipe from Eggland’s Best is simple!

Directions:

  1. Cut your avocado in half and remove the pit.

  2. Scoop out a small amount of each half so the egg will fit in the hole.

  3. Crack your eggs into each hole & sprinkle with salt and pepper.

  4. Put on a baking sheet and bake for about 15-20 minutes until cooked thoroughly or put on broil for just a few minutes until cooked.

  5. Once cooked, top with crumbled bacon and dig in!

Tip: Sprinkle some chopped tomatoes and fresh parsley for a vegetarian option.
