A Better Tasting & Better for You Halloween Recipe

Trick or treat! It’s time for the #1 holiday for candy and sweets! And while we all like to “treat” our little ones this time of year, it’s also easy to “trick” them by sneaking vitamins and nutrients into some of their favorite Halloween snacks. By using Eggland’s Best eggs, you’ll pack superior nutrition into a Halloween recipe that’s not only better tasting, but better for you. Like, these Pumpkin Pancakes from Eggland’s Best are a perfect snack or breakfast for your little trick or treaters! More on those in a minute....

What I love about Eggland’s Best eggs is they now contain 6x more vitamin D than ordinary eggs, which helps to form and maintain strong bones for all the spooky skeletons out there! By simply swapping out ordinary eggs for Eggland’s Best eggs, you’ll also get superior nutritional benefits:

  • 10x more vitamin E

  • Double the vitamin B12

  • Double the omega-3s

  • 25% less saturated fat.

Eggland’s Best eggs are from USDA-inspected local farms in the United States with 30,000 quality tests done every year and are delivered to your supermarket typically within 72 hours of laying which is why Eggland’s Best eggs are the country’s number one egg!

How can you tell you are using EB egg? Look for the distinctive “EB” stamp right on the shell. And if you’re wondering, the logo is applied with food safe ink that is acceptable as a food additive. So nothing to be afraid of this Halloween, except your little monsters!

Now the secret behind the Eggland’s Best egg is their special, wholesome, all-vegetarian hen feed. Because of this feed, it’s been confirmed through Independent testing that Eggland’s Best eggs stay fresher longer than ordinary eggs and a fresh egg equals a fresh recipe like these Pumpkin Pancakes!

Don’t these look delicious? They are super easy to make and always a crowd favorite at my house.

Prep Time: 10 mins | Cook Time: 15 mins | Yield: 16 servings | Recipe by: Eggland's Best

  • 1 1/2 cups low-fat buttermilk

  • 1 1/3 cups pure pumpkin

  • 2 Eggland's Best eggs (large)

  • 2 tablespoons canola oil

  • 2 teaspoons vanilla extract

  • 2 1/4 cups all-purpose flour

  • 1/4 cup light brown sugar, packed

  • 2 tablespoons granulated sugar

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1 teaspoon pumpkin pie spice

  • 1/2 teaspoon ginger

  • 1/2 teaspoon nutmeg

  • 1/2 teaspoon salt

1. In a large bowl, mix dry ingredients: flour, brown sugar, sugar, baking powder, baking soda, cinnamon, pumpkin pie spice, ginger, nutmeg, and salt. Blend well and set aside.

2. In another large bowl, whisk pumpkin, eggs, buttermilk, canola oil, and vanilla extract until well well mixed; slowly add dry ingredients and beat well.

3. Using a 1/3 cup dry measuring cup, or a large ladle, pour batter onto a non-stick skillet heated over medium-high heat.

Cook until bubbles begin to form and the edge of the pancake are done, approximately 1 minute; flip and cook on the other side for another minute.

4. Repeat until all batter is used.

5. Top with butter and maple syrup, or with fresh whipped cream.

I love serving these with pure maple syrup and whipped cream on top with a few scrambled eggs on the side for added protein!

If you’d like to switch up the presentation, you can even make little pancake skewers with fruit in-between! So many options with a recipe like this, so feel free to get creative and have your kids join in on it too. They will love learning how to cook and cracking eggs is a lot of fun for kids!

During this Halloween season Eggland’s Best is also celebrating something else that is spooktacular: 25 years of providing a better egg with superior quality, freshness, nutrition and taste. They have lots of recipes on their website to celebrate the occasion!
