Now that it’s February, you might feel a little love in the air and notice red and pink heart decorations strung all around. But there’s another heart-centered campaign February is known for, American Heart Health Month. A breakup with your boyfriend isn’t the only thing to hurt your heart! Heart disease happens to be one of the greatest health threats, even greater than breast cancer in women and prostate cancer in men. So what's the best way to keep your heart happy? Stay single...just kidding. How about through your diet!? I have a go-to recipe my taste buds and heart both agree on.
This is an Egg Cup Lentil Bowl...doesn’t it look delicious?! Notice the plump nutrient-rich lentils on the bottom. Lentils happen to be one of my favorite foods and they’re a good source of cholesterol-lowering fiber. Plus, notice this gorgeous egg right in the center of the pepper. It’s not just any egg, it’s an Eggland’s Best egg. When I cook this recipe for my family I always make sure to swap in Eggland’s Best eggs for ordinary eggs because they’re the only egg that gives us double the omega-3’s, more than double the vitamin B12 and 25% less saturated fat!
Now, back to our hearts...they thrive on a diet rich in omega-3’s and B12. Both of which keep our hearts healthy and protect us against stroke and heart disease. Not only that, but with Eggland’s Best eggs, you get 6 times more vitamin D, and 10 times more vitamin E compared to ordinary eggs. So by making just one simple little swap, you can make a big impact on your health and your family’s health.
One thing my family & I both love about this recipe is that it’s super easy for supper time. In just 25 minutes you can have this healthy and hot dish on your table. The best part is the handful of ingredients it uses are ones you already have in your pantry and this recipe is great for breakfast, brunch or for the main course at your next dinner! Your guests will love the fresh taste...a fresh egg equals a fresh recipe and independent testing has confirmed that Eggland’s Best eggs stay fresher longer than ordinary eggs due to Eggland’s Best unsurpassed quality processes and wholesome, all-vegetarian hen feed. So, in honor of American Heart Health Month, make it your next go-to.
